Ingredients
Chicken
- 1.5 lb. chicken thighs (boneless, skinless)
- 1 tbsp olive oil
- Salt and pepper, to taste
Vegetables & Herbs
- 3 carrots, chopped
- 1 yellow onion, chopped
- 5 garlic cloves, chopped
- 2 russet potatoes, peeled and diced
- 1 bay leaf
- 3/4 tsp oregano
- 1/2 tsp rosemary
- 1 tsp salt
Liquids & Others
- 2 tbsp coconut aminos
- 2 1/2 cups chicken broth
- 1 cup almond milk (or milk of choice)
- 2 tbsp cornstarch (or arrowroot)
Instructions
- Sear the Chicken: Cut the chicken into 1/2-inch pieces, season with salt and pepper, and cook in olive oil over medium heat in a skillet for about 5 minutes until cooked through. Transfer the cooked chicken to the slow cooker.
- Add Vegetables and Herbs: Place chopped carrots, onion, garlic, potatoes, coconut aminos, salt, oregano, rosemary, and bay leaf into the slow cooker. Pour in the chicken broth and cover with the lid. Cook on LOW for 6 hours to develop tender vegetables and flavorful broth.
- Thicken the Stew: Near the end of cooking, whisk almond milk and cornstarch together in a bowl until smooth. Stir this mixture into the slow cooker, replace the lid, and cook on HIGH for an additional 30–45 minutes, allowing the stew to thicken and become creamy.
- Final Seasoning and Serve: Add black pepper to taste, stir well, then serve the stew hot. Enjoy the rich and comforting flavors!
