Instructions
- Sauté Vegetables: In a large Dutch oven or heavy pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook while stirring often for about 8 minutes until the vegetables soften.
- Add Seasonings and Potatoes: Stir in the chopped potatoes, minced garlic, dried oregano, dried basil, Italian seasoning, salt, black pepper, and tomato paste. Cook while stirring for 2 minutes to combine the flavors.
- Add Broth and Tomatoes: Pour in the vegetable broth, fire roasted diced tomatoes, and chopped zucchini. Bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover the pot, and cook for 20 minutes to let the vegetables tenderize.
