Description

These Best Greek Lemon Potatoes are a vibrant and flavorful side dish that perfectly complement any meal. Made with simple, wholesome ingredients like lemon juice, olive oil, and herbs, these potatoes are roasted until tender and golden with a tangy, aromatic finish. This recipe is Whole30 and vegan-friendly, featuring a hint of turmeric for an optional earthy tone, making it both healthy and delicious.

Ingredients

Potatoes

  • 5 large Yukon Gold or Russet potatoes

Seasoning & Liquid

  • 2 lemons (juiced)
  • 4 tbsp extra-virgin olive oil
  • 1/2 cup water
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 tsp turmeric (optional)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to get it ready for roasting the potatoes.
  2. Prepare the potatoes: Scrub and peel the potatoes thoroughly under running water. Cut them into 1 1/2-inch thick wedges, making sure the wedges are similar in size to ensure even cooking.
  3. Arrange the potatoes in the baking dish: Place the potato wedges in a large glass or casserole baking dish in a single layer to help them roast evenly.
  4. Add liquids and seasonings: Pour the water, lemon juice, olive oil over the potatoes, then sprinkle the sea salt, black pepper, dried oregano, and optional turmeric. Use a wooden spoon or your hands to toss and coat the wedges evenly with the mixture.
  5. Bake covered: Cover the baking dish with tin foil and bake for 30 minutes to allow the potatoes to start cooking through and absorb the flavors.
  6. Finish baking uncovered: Remove the tin foil and continue baking the potatoes uncovered for about 15 more minutes, or until they turn golden and are fork-tender.

Notes

  • Use Yukon Gold potatoes for a buttery texture or Russet potatoes for a fluffier interior.
  • Turmeric is optional but adds a lovely color and subtle flavor.
  • Make sure the potato wedges are of uniform size for even baking.
  • Serve immediately while hot as a side dish with your favorite protein or vegetables.
  • Leftovers can be refrigerated and gently reheated in the oven for best texture.
