The chicken is marinated in a flavorful blend of garlic, lemon juice, vinegar, oregano, and Greek yogurt to infuse it with bright Mediterranean flavors. The tzatziki, made with grated cucumber and Greek yogurt, adds a cool, refreshing contrast. Perfect for a quick yet authentic Greek-inspired dinner that brings vibrant flavors and wholesome ingredients together.

Ingredients

Chicken Marinade

  • 2 lb / 1 kg boneless skinless chicken thigh fillets
  • 3 large garlic cloves, minced (~3 tsp)
  • 1 tbsp white wine vinegar (or red wine or apple cider vinegar)
  • 3 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 3 tbsp Greek yogurt, preferably full fat
  • 1 1/2 tbsp dried oregano
  • 1 tsp salt
  • Black pepper, to taste

Tzatziki Sauce

  • 2 cucumbers (to make about 1/2 – 3/4 cup grated cucumber after squeezing out juice)
  • 1 1/4 cups Greek yogurt, preferably full fat
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil (or more for richer sauce)
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • Black pepper, to taste

Tomato Cucumber Salad

  • 3 tomatoes, deseeded and diced
  • 3 cucumbers, diced
  • 1/2 red Spanish onion, peeled and finely chopped
  • 1/4 cup fresh parsley leaves (optional)
  • Salt and pepper, to taste

To Serve

  • 4 to 6 pita breads or flatbreads, warmed

Instructions

  1. Marinate the Chicken: Place the marinade ingredients—minced garlic, vinegar, lemon juice, olive oil, Greek yogurt, dried oregano, salt, and black pepper—in a ziplock bag and massage to combine thoroughly. Add the chicken thighs to the bag, massaging the marinade over all pieces evenly. Seal and refrigerate for at least 2 hours, preferably 3 hours, ideally up to 12 hours but no longer than 24 hours, allowing the flavors to penetrate the chicken deeply.
  2. Prepare the Tzatziki Sauce: Cut the cucumbers in half lengthwise and use a teaspoon to scrape out the watery seeds. Coarsely grate the cucumber using a box grater. Wrap the grated cucumber in paper towels or a clean tea towel and squeeze firmly to remove excess moisture to prevent a watery sauce.
  3. Mix Tzatziki Ingredients: Place the drained cucumber in a bowl and add the Greek yogurt, lemon juice, olive oil, minced garlic, salt, and black pepper. Stir well to combine and set aside in the refrigerator for at least 20 minutes to allow the flavors to meld and the sauce to thicken.
  4. Make the Tomato Cucumber Salad: In a medium bowl, combine the diced tomatoes, diced cucumbers, finely chopped red onion, and fresh parsley if using. Season with salt and pepper to taste. Toss gently and set aside.
  5. Cook the Chicken: Preheat your outdoor grill to medium-high heat and brush the grates with oil to prevent sticking; alternatively, heat 1 tablespoon of olive oil in a frying pan over medium-high heat on the stovetop. Remove chicken thighs from marinade, letting excess drip off. Grill or fry for 2 to 3 minutes per side until golden brown and the internal temperature reaches 165°F (74°C), ensuring the chicken is cooked through. Cooking time may vary depending on the size of the chicken pieces.
  6. Rest the Chicken: Transfer the cooked chicken to a plate, loosely cover with foil, and let rest for 5 minutes to allow juices to redistribute, resulting in tender, juicy meat.
  7. Assemble the Gyros: If chicken thighs are large, cut them into smaller pieces for easier wrapping. Warm pita breads or flatbreads, then lay each on a piece of parchment or foil. Spread some tomato cucumber salad down the center of the bread, layer with grilled chicken pieces, and top generously with tzatziki sauce.
  8. Wrap and Serve: Roll up the pita to enclose the filling, twisting the parchment paper ends to secure the wrap. Cut in half if desired and serve immediately. For a casual meal, lay out the ingredients and let guests assemble their own gyros.

Notes

  • Marinating the chicken for longer (up to 12 hours) improves flavor and tenderness but avoid exceeding 24 hours to prevent texture degradation.
  • Removing excess moisture from the grated cucumber is crucial to avoid a watery tzatziki sauce.
  • You can substitute chicken thighs with chicken breasts, but thighs remain juicier and more flavorful.
  • For an indoor alternative, cook the chicken on a grill pan or skillet if you do not have an outdoor grill.
  • Warm pita breads in a skillet or oven wrapped in foil before assembling for best texture and flavor.
  • Add a squeeze of fresh lemon juice to the salad just before serving for extra brightness.
  • Tzatziki can be made a day ahead and refrigerated to deepen flavors.
