  • 2 tbsp olive oil or vegan butter
  • 1 medium onion, diced finely
  • 1 stick celery, diced finely
  • ½ cup fresh sage leaves, diced
  • 5 cups chunky breadcrumbs, from gluten-free or regular bread (see note for how to make)
  • ½ cup vegetable broth or stock
  • ½ tsp salt (more if needed)
  • ¼ tsp black pepper


Instructions

  1. Preheat and prepare skillet: Preheat the oven to 350°F (175°C). Heat olive oil or vegan butter in a large skillet over medium-high heat to prepare for sautéing the vegetables.
  2. Sauté vegetables and herbs: Add the finely diced onion and celery to the hot skillet and sauté for about 5 minutes, stirring constantly until softened. Add the diced sage leaves and sauté for an additional 1 minute to release their aroma, then remove from heat.
  3. Combine stuffing ingredients: In a large bowl, thoroughly mix together the sautéed onion, celery, sage mixture with the chunky breadcrumbs, vegetable broth or stock, salt, and black pepper until well combined.
  4. Transfer to baking dish: Pour the stuffing mixture into a deep-sided ovenproof dish or baking sheet, spreading it evenly. Cover the dish tightly with foil to retain moisture during baking.
  5. Bake covered: Place the covered stuffing in the preheated oven and bake for 30 minutes, allowing the flavors to meld and the bread to absorb the broth.
  6. Bake uncovered to brown: Remove the foil and continue baking for another 10 minutes, or until the top is golden brown and slightly crisp.
  7. Serve: Remove from the oven and serve immediately as a flavorful side dish. Optionally, serve with gravy for added richness.
