- Beat Egg Whites: Using a stand or hand mixer, beat the egg whites on medium-high speed until foamy. Add cream of tartar and continue beating until soft peaks form. Gradually add ¼ cup sugar and beat until stiff peaks form. Gently fold the egg whites into the chocolate mixture until uniform. Set aside.
