Instructions
- Brown the Beef: Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat. Once hot, add the stew beef cubes and season with kosher salt and black pepper. Cook the beef until browned on all sides, then remove it to a clean plate.
- Sauté the Vegetables: In the same pot, add the chopped onion, celery, carrots, and sliced mushrooms. Cook for 5-6 minutes, stirring occasionally, until the vegetables start to soften.
- Add Aromatics and Tomato Paste: Stir in the minced garlic, dried thyme, and tomato paste. Cook while stirring for about 1 minute to develop the flavors.
- Return the Beef: Place the browned beef and any accumulated juices back into the pot with the vegetables.
- Add Broth and Seasonings: Pour in the beef broth, add the Worcestershire sauce and bay leaves. Stir everything together and bring to a simmer. Reduce the heat to low, cover the pot, and maintain a gentle simmer for 45 minutes.
