Description

This Best Balsamic Chicken and Mushrooms recipe features tender seared chicken thighs simmered in a rich, creamy balsamic mushroom sauce. Infused with garlic and fresh parsley, this delicious and comforting dish is perfect for a flavorful weeknight dinner that can be ready in just 40 minutes.

Ingredients

Chicken

  • 1 pound chicken thighs (boneless or bone-in)
  • Kosher salt and pepper, to taste
  • 1 tablespoon Fustini’s Delicate Select Olive Oil
  • 1 tablespoon unsalted butter

Mushroom Sauce

  • 12 ounces whole cremini mushrooms, stems removed
  • 4 garlic cloves, minced
  • ¼ cup Fustini’s Balsamic Vinegar
  • ¾ cup cream
  • 3 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken: Season the chicken thighs generously with kosher salt and pepper on both sides. This will ensure the chicken is flavorful.
  2. Sear the chicken: Heat the olive oil in a large skillet over medium heat. Once hot, place the chicken thighs in the skillet. Sear each side for about 2 minutes until golden brown. Remove the chicken from the skillet and set aside on a plate.
  3. Cook mushrooms and garlic: Add the unsalted butter to the same skillet. Once melted, add the cremini mushrooms and minced garlic. Cook for 5 to 7 minutes until the mushrooms have softened and released their liquid. Season with a pinch of salt and pepper while stirring occasionally.
  4. Deglaze and make sauce: Pour in the balsamic vinegar to deglaze the pan, scraping up any browned bits stuck to the skillet. Cook for 1 to 2 minutes until reduced slightly. Stir in the cream and let it simmer for a few minutes until the sauce thickens mildly.
  5. Finish cooking chicken: Return the seared chicken thighs to the skillet, nestling them into the sauce. Cover the skillet and cook over low heat for 6 to 8 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). If using chicken breasts, follow the same method and check the internal temperature to ensure doneness.
  6. Garnish and serve: Sprinkle the dish with fresh chopped parsley before serving. Enjoy the balsamic chicken and mushrooms hot with your preferred side.

Notes

  • You can substitute chicken breasts for thighs, but be sure to check internal temperature carefully to avoid overcooking.
  • If you prefer a thicker sauce, simmer a bit longer after adding the cream or add a small slurry of cornstarch and water.
  • For a dairy-free version, substitute cream with coconut milk or a non-dairy cream alternative.
  • Serve this dish with mashed potatoes, steamed rice, or crusty bread to soak up the delicious sauce.
  • Make sure not to overcrowd the pan when searing the chicken to get a nice golden crust.
