Ingredients
Filling
- 8 cups (approx. 1kg) mixed berries (such as blueberries, raspberries, blackberries, and strawberries)
- 1/2 cup (100g) granulated sugar
- 2 Tablespoons (15g) cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon pure vanilla extract
Topping
- 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
- 1/3 cup (65g) granulated sugar
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 Tablespoons (85g) unsalted butter, cold and cubed
- 1/2 cup (120ml) buttermilk, cold
Topping Before Baking
- 1 Tablespoon buttermilk
- Coarse sugar, for sprinkling
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (177°C). Grease a 9×13-inch baking pan thoroughly to prevent sticking.
- Make the Filling: In a large bowl, gently combine the mixed berries with sugar, cornstarch, lemon juice, and vanilla extract. Mix carefully to coat all berries without breaking them. Spread this berry filling evenly into the prepared baking pan.
- Make the Topping: In another large bowl, whisk together the all-purpose flour, sugar, baking powder, and salt. Using a pastry cutter or two forks, cut the cold cubed butter into the dry ingredients until the mixture looks like coarse crumbs with pea-sized pieces. While mixing gently, slowly pour in the cold buttermilk and stir until evenly combined into a soft dough.
- Assemble the Cobbler: Take handfuls of the dough and gently flatten them out. Place these flattened dough pieces over the berry filling, covering most of the surface but leaving small gaps for steam to escape.
- Add Topping Finish: Brush the biscuit dough topping with 1 tablespoon of buttermilk, then sprinkle coarse sugar evenly on top. This optional step adds a glossy, crunchy, golden crust.
- Bake: Place the cobbler in the preheated oven and bake for 45-55 minutes until the topping is golden brown and cooked through. Test by inserting a toothpick into the dough; it should come out clean.
- Cool and Serve: Remove the cobbler from the oven and set the pan on a wire rack to cool for 5 minutes before serving. Enjoy warm, ideally paired with vanilla ice cream or whipped cream.
- Storage: Cover any leftovers and store in the refrigerator for up to 5 days.
Notes
- You can use any combination of fresh or frozen mixed berries, but thaw and drain frozen berries slightly to avoid excess liquid.
- For a non-dairy version, substitute buttermilk with a mixture of milk and lemon juice or a dairy-free yogurt.
- If you prefer a sweeter filling, increase the sugar slightly; adjust according to the tartness of your berries.
- Butter should be very cold to ensure a flaky biscuit topping.
- The coarse sugar topping is optional but recommended for added texture and appearance.
