  • 4 fresh Belgian endives

Butter & Sugars

  • 2 tbsp unsalted butter, diced
  • 1 tsp brown sugar

Liquids & Vinegars

  • 1 tbsp balsamic vinegar
  • Water (about 1 cup for braising)

  • Salt, to taste
  • Pepper, to taste
  • Nutmeg, to taste


Instructions

  1. Prepare the Endives: Rinse the Belgian endives thoroughly and drain them on a clean kitchen towel. Trim a small portion of the reddish bottom. Slice each endive lengthwise in half. Season both sides lightly with salt, pepper, and nutmeg.
  2. Caramelize the Endives: Place the endives cut side down in a dry pan with a lid—no butter or oil added yet. Heat the pan over high heat and let the endives caramelize for about 5 minutes until they develop a golden-brown color.
  3. Add Butter and Season Again: Add the diced unsalted butter to the pan, and season the endives once more with salt, pepper, and nutmeg. Let them bake in the melted butter for 3 minutes to absorb the rich flavor.
  4. Braise the Endives: Pour in about one cup of water, sprinkle the brown sugar evenly over the endives, and cover the pan with the lid. Bring to a rolling boil, then reduce the heat to medium-low. Braise for 20 to 25 minutes, or until the endives are very soft and have taken on a dark brown hue. Check regularly to add more water if needed, and gently shake the pan occasionally to prevent scorching.
  5. Finish with Vinegar and Seasoning: Carefully flip the endives over using two forks, then sprinkle with the balsamic vinegar. Add extra water if necessary. Adjust the seasoning with additional salt, pepper, or nutmeg to taste.
  6. Serve: Transfer the braised endives to a warm serving dish or divide onto plates. Serve immediately while hot as a flavorful and comforting side dish.
