Ingredients
Meat and Vegetables
- 1 pound ground beef (or pork, chicken, turkey, or sausage)
- ¾ cup onion, chopped
- ½ cup chopped peppers
Spices and Seasonings
- 2 teaspoons chili powder
- ½ teaspoon salt
- ½ teaspoon garlic salt
Pantry Items
- 1 can (16 oz) crushed tomatoes, undrained
- 1 can (15 oz) red kidney beans, undrained
- ¾ cup long grain rice, uncooked
- ¾ cup water
Finish
- 1 cup shredded cheese
- 1 bag corn chips (for serving, if desired)
Instructions
- Brown the Meat and Onions: In a large skillet, add the chopped onions and ground beef. Cook over medium heat, stirring occasionally, until the meat is no longer pink and the onions are tender. Drain any excess fat if necessary.
- Season the Meat: Sprinkle chili powder, salt, and garlic salt evenly over the cooked ground meat. Stir well to combine all the spices thoroughly with the meat.
- Add Tomatoes, Beans, Rice, and Peppers: Pour in the undrained crushed tomatoes and kidney beans. Add the uncooked long grain rice, water, and chopped peppers. Stir everything together to distribute ingredients evenly in the skillet.
- Simmer Covered: Cover the skillet with a lid and simmer on low heat for 20 minutes, stirring occasionally to prevent the rice from sticking and ensure even cooking.
- Add Cheese and Melt: After 20 minutes, sprinkle the shredded cheese evenly over the top. Cover again and let sit on low heat until the cheese melts completely.
- Serve with Corn Chips: Optionally, sprinkle corn chips over the skillet before serving or serve them on the side for added crunch. Serve immediately and enjoy your flavorful beef taco skillet!
