Spicy Beef

- 1 small yellow onion, finely chopped
- 1 large clove garlic, minced
- 1 lb (90 to 93%) lean ground beef
- 2 tablespoons chili powder
- ½ teaspoon dried oregano
- 1 teaspoon ground cumin
- ¼ teaspoon cayenne pepper
- ¼ teaspoon salt
- 1 tablespoon tomato paste
Assembly
- 1 (10-oz) bag tortilla chips
- 1 pound (16 oz) shredded Mexican blend cheese (4 cups)
- 2 jalapeño peppers, thinly sliced into rounds (optional)

Instructions
- Prepare the Quick Salsa: In a small bowl, combine the minced jalapeño pepper, sliced scallions, minced garlic, fresh cilantro leaves, salt, lime juice, and diced tomatoes. Stir well to blend all the fresh flavors together. Set this salsa aside to allow the flavors to marry while you prepare the beef.

Repeat the layers with the remaining chips, beef, cheese, and jalapeños to form a second layer.
- Bake the Nachos: Place the assembled nachos in the preheated oven and bake until the cheese is completely melted and bubbly, about 7 to 10 minutes. Remove from the oven and serve immediately while hot and gooey.
