Description

This comforting Beef & Mushroom Country Casserole combines tender ground beef, sautéed mushrooms, onions, and a creamy tomato-based sauce with egg noodles and cheddar cheese. Baked to perfection, this hearty casserole is a crowd-pleaser perfect for a family dinner.


Ingredients

Meat and Vegetables

  • 1 Tbsp cooking oil
  • 1/2 lb. ground beef
  • 8 oz. mushrooms, sliced
  • 1 onion, finely diced
  • 4 green onions, sliced

Seasonings & Sauces

  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • Freshly cracked pepper, to taste
  • 1/2 Tbsp Worcestershire sauce

Pasta & Dairy

  • 8 oz. extra wide egg noodles
  • 1 15oz. can tomato sauce
  • 1 15oz. can fire roasted diced tomatoes, drained
  • 8 oz. sour cream
  • 8 oz. medium cheddar, shredded


Instructions

  1. Cook the Noodles: Prepare the egg noodles according to the package instructions but cook them until slightly less than fully done, as they will continue cooking during baking. Drain and set aside.
  2. Prepare Vegetables: While noodles cook, finely dice the onion and slice the mushrooms to have them ready for sautéing.
  3. Brown the Beef: Heat the cooking oil in a large skillet over medium heat and add the ground beef. Cook until the beef is fully browned, draining excess fat if necessary for leaner results.
  4. Sauté Vegetables and Combine Sauce: Add diced onion, sliced mushrooms, garlic powder, salt, and freshly cracked pepper to the skillet. Sauté until mushrooms are soft and onions turn translucent. Stir in the tomato sauce and Worcestershire sauce, then simmer the mixture until it thickens slightly.
  5. Combine Ingredients: Preheat the oven to 350°F. Return the noodles to their pot (heat off) and add the beef and tomato mixture, drained diced tomatoes, sour cream, half the shredded cheddar, and half the green onions. Stir well to combine and transfer to a 9×13 inch casserole dish.
  6. Bake the Casserole: Sprinkle the remaining shredded cheddar over the top of the casserole. Bake in the preheated oven for 30 minutes, or until bubbling around the edges and the top starts to lightly brown. Remove from oven and garnish with the remaining green onions before serving.

Notes

  • Cooking the noodles slightly underdone prevents them from becoming mushy once baked.
  • Drain excess fat from higher-fat ground beef to reduce grease in the casserole.
