Ingredients
Chicken Marinade
- 1 large boneless, skinless chicken breast, cut into small bite-sized pieces (or chicken thighs, see note 1)
- 1 tbsp olive oil
- 1 tsp sweet paprika
- ½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp sea salt flakes
- ½ tsp freshly cracked black pepper
Flatbreads and Toppings
- 4 flatbreads (see note 2)
- 60 ml store-bought BBQ sauce or homemade
- 150 g shredded mozzarella
- 1 small red onion, finely sliced
- 1 small capsicum (bell pepper), finely sliced
- 1 tbsp freshly chopped coriander (cilantro), to garnish (optional, see note 3)
Instructions
- Marinate the chicken: Place the chicken pieces into a medium bowl and add olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, sea salt flakes, and cracked black pepper. Toss everything together with tongs until the chicken is thoroughly coated in the spices and oil, ensuring even flavor throughout.
- Cook the chicken: Heat a large, deep, heavy-based frying pan over medium-high heat. Add the marinated chicken pieces and cook for about 6 minutes, stirring occasionally, until the chicken is browned on all sides and cooked through. Once done, transfer the cooked chicken to a plate and set aside.
- Preheat the oven: Set your oven to 200°C (400°F) fan-forced, or 220°C (425°F) conventional, to get ready for baking the flatbreads.
- Prepare flatbreads: Line one or two baking trays with parchment paper. Lay the flatbreads evenly on the trays. Spread a thin, even layer of BBQ sauce over each flatbread as the base for the toppings.
- Assemble toppings: Sprinkle shredded mozzarella evenly on all the flatbreads. Then top with the cooked chicken pieces, finely sliced red onion, and capsicum slices to add color and crunch.
- Bake: Place the baking trays in the preheated oven. Bake the flatbreads for 8 to 10 minutes, or until the cheese has fully melted, is bubbly, and the edges of the flatbreads have turned golden and crispy. If using two trays, place one tray at the top rack and one at the bottom, swapping their positions halfway through baking to ensure even cooking.
- Serve: Remove the flatbreads from the oven and sprinkle freshly chopped coriander over the top if desired. Serve immediately while warm and enjoy your flavorful BBQ Chicken Flatbreads.
Notes
- Note 1: You can substitute chicken breast with chicken thighs if preferred for a juicier result.
- Note 2: Store-bought flatbreads work well, but you can also use homemade flatbreads or naan as a base.
- Note 3: Coriander garnish is optional but adds a fresh, herbaceous touch to balance the smoky BBQ flavors.
