Description

This BBQ Chicken Flatbread recipe is a delightful and easy-to-make meal featuring tender, seasoned chicken breast atop a crispy flatbread layered with tangy barbecue sauce, melted mozzarella, and vibrant vegetables. Perfect for a quick weeknight dinner or casual get-together, it combines smoky, savory flavors with a fresh finish of cilantro and optional red pepper flakes for a mild kick.

Ingredients

Chicken and Seasoning

  • 2 large chicken breasts
  • 1 tsp olive oil
  • ½ tsp dried oregano
  • ¼ tsp dried tarragon
  • ¼ tsp salt

Flatbread and Toppings

  • 2 flatbreads (or naan)
  • ½ cup barbecue sauce
  • 2 garlic cloves, minced
  • 1 cup mozzarella cheese
  • 1 small red bell pepper, chopped
  • ¼ cup red onion, sliced
  • 2 Tbsp cilantro, chopped
  • 2 Tbsp red pepper flakes (optional)
  • 3 Tbsp parmesan cheese for topping (optional)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and cut any large pieces in half to ensure even cooking. In a small bowl, combine the dried oregano, dried tarragon, and salt. Sprinkle this seasoning mixture evenly on both sides of the chicken breasts.
  2. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Place the seasoned chicken in the hot skillet and cook on medium heat for 8-10 minutes on each side, or until the internal temperature reaches 165ºF. Remove the chicken, let it rest for a few minutes, then cut into bite-sized pieces.
  3. Prepare Flatbread: Preheat your oven to 375ºF. Place the flatbreads on a large baking sheet. Generously brush each flatbread with barbecue sauce, then sprinkle the minced garlic evenly over the top.
  4. Assemble and Bake: Sprinkle mozzarella evenly over the flatbreads, followed by the cooked chicken pieces, sliced red onions, and chopped red bell pepper. Optionally, sprinkle parmesan and red pepper flakes on top. Bake on the center rack for 10-15 minutes, or until the flatbread is browned and the cheese is melted and bubbling.
  5. Finish and Serve: Remove the flatbreads from the oven and let cool for a few minutes. Garnish with chopped cilantro and additional drizzles of barbecue sauce if desired. Slice with a pizza cutter and serve warm.

Notes

  • You can substitute cooked rotisserie chicken instead of cooking chicken breasts from scratch for a quicker option.
  • Flatbreads or naan both work well—choose your favorite for varied texture.
  • Adjust red pepper flakes to taste for desired level of spiciness or omit for mild flavor.
  • Allowing the chicken to rest after cooking helps keep it juicy.
  • Use leftover barbecue sauce for drizzling at the end to intensify flavor.
