This fun and hearty recipe comes together quickly using stovetop frying, microwaving, and oven baking techniques, making it a flavorful and satisfying meal perfect for any occasion.
Ingredients
Meat and Vegetables
- 1 lb sausages
- 1 medium onion, finely sliced into strips
- 5 medium golden potatoes
Other Ingredients
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon garlic salt
- 1 cup shredded sharp cheddar cheese
- 1 tablespoon finely chopped parsley (optional)
Instructions
- Cook Sausages and Onions: In a large frying pan, heat the extra virgin olive oil over medium-high heat. Add the sliced onions and sausages, cooking them until the sausages are browned on all sides and no pink remains inside, and the onions are soft and slightly caramelized.
- Cook Potatoes in Microwave: Place the golden potatoes in a microwave-safe container or bowl. Microwave on high for 13 minutes, or until a fork can easily pierce through the potatoes, indicating they are cooked through.
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and lightly spray it with cooking spray to prevent sticking.
- Prepare Potatoes for Smashed Texture: Remove the potatoes from the microwave and let them cool for about 5 minutes. Then slice each potato in half and arrange them cut side down on the prepared baking sheet.
- Smash and Season Potatoes: Use a spoon to press down gently in the center of each potato half, creating a ‘well’ by smashing them slightly. Sprinkle the smashed potatoes evenly with salt and garlic salt. Place small pinches of shredded cheddar cheese into each well.
- Bake Potatoes: Bake the prepared potatoes in the preheated oven for 7 to 10 minutes, or until the cheddar cheese melts and starts to bubble. Remove from oven and let cool for a few minutes before serving.
- Serve: On each plate, place one cooked sausage and some caramelized onions. Add two cheddar-topped smashed potato halves. Finish by sprinkling with finely chopped parsley if desired, then enjoy this comforting and festive meal.
Notes
- You can substitute the sausages with chicken or turkey sausages for a leaner option.
- Use Yukon Gold potatoes for a creamy texture; Russet potatoes also work well.
- Adjust garlic salt and regular salt to taste based on dietary preferences.
- The parsley garnish is optional but adds a nice fresh color and flavor contrast.
- Microwave times may vary depending on your appliance; adjust accordingly.
- For extra crispiness, broil the baked potatoes for 1-2 minutes at the end, watching carefully to prevent burning.
