Ingredients

Sausages and Gravy

  • 1/2 tbsp oil
  • 8 sausages of choice (pork, beef, or chicken)
  • 1 large onion, halved and finely sliced (yellow, white, or brown)
  • 2 garlic cloves, minced
  • 3 tbsp plain flour
  • 2 cups beef stock or broth
  • 1/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook sausages: Heat 1/2 tablespoon of oil in a large skillet or fry pan over medium-high heat. Add the sausages and cook, turning frequently, until browned all over and cooked through, about 8 minutes depending on size.
  2. Remove sausages: Transfer the cooked sausages onto a plate and turn the heat down to medium.
  3. Ensure enough oil: Check that about 2 tablespoons of oil remain in the skillet. If there’s less, add a bit of butter or oil to make up the difference for sautéing the vegetables.
  4. Sauté onion and garlic: Add the finely sliced onion and minced garlic to the skillet. Cook, stirring occasionally, until the onion is golden brown, about 4 minutes.
  5. Cook flour: Sprinkle the plain flour over the onions and garlic, mix well, and cook for 2 minutes stirring constantly to remove the raw flour taste.
  6. Add beef stock gradually: Pour in about 3/4 cup of beef broth first, stirring to form a thick mixture with the onions. Then add the remaining beef broth and combine thoroughly. Use a whisk to smooth out any lumps.
  7. Thicken gravy: Let the gravy simmer, stirring frequently, for 2 to 3 minutes until it thickens slightly, though it should still be a bit thinner than desired as it will thicken further when served.
  8. Season gravy: Stir in salt and black pepper, taste, and adjust seasoning as needed.
  9. Serve: Plate the sausages and pour over plenty of onion gravy. Serve alongside creamy mashed potatoes and peas. For a low-carb option, substitute mashed potatoes with creamy cauliflower mash.

Notes

  • Choose sausages according to dietary preferences; pork and beef are traditional, but chicken or vegetarian sausages also work.
  • Any type of onion (yellow, white, or brown) can be used — avoid sweet onions as they are less suited for gravy.
