Instructions

- Prepare skillet for gravy: Reduce heat to medium. Ensure about 2 tbsp oil remain in the skillet; if less, add additional butter or oil as needed.
- Sauté onion and garlic: Add the sliced onion and minced garlic to the skillet. Cook, stirring occasionally, until golden brown, about 4 minutes.
- Add and cook flour: Stir in 3 tbsp plain flour and continue cooking, stirring constantly, for 2 minutes to cook off the raw flour taste.
- Add beef stock gradually: Pour about 3/4 cup of beef broth into the skillet and stir to form a sludge with the onion mixture. Then add the remaining beef broth, combining thoroughly. Use a whisk if needed to smooth out any lumps.
- Thicken gravy: Let the gravy simmer, stirring frequently, for 2 to 3 minutes until it thickens slightly but remains a bit thinner than desired, as it will continue to thicken when served.
- Season gravy: Add 1/4 tsp salt and 1/2 tsp black pepper. Stir, taste, and adjust seasoning with more salt if needed.
- Serve: Plate the sausages and generously ladle the onion gravy over them. Serve alongside creamy mashed potatoes and peas. For a low-carb option, substitute mashed potatoes with creamy cauliflower mash.
