  • 2 large eggs

  • 1 cup (240ml) mashed overripe banana (2-3 bananas)
  • 1/2 cup (120ml) milk

Frosting

  • 8 oz (226g) cream cheese, room temperature
  • 1/2 cup (112g) salted butter, room temperature
  • 4 cups (460g) powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 12-14 banana chips, optional


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (176°C) and line a cupcake pan with cupcake liners to prevent sticking and ease cleanup.
  2. Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, baking soda, ground cinnamon, and salt. Set this mixture aside for later incorporation into the batter.
  3. Cream Butter, Oil, and Sugars: In a large mixing bowl, beat the room temperature unsalted butter, vegetable oil, light brown sugar, and granulated sugar together until the mixture is pale and fluffy, about 2-3 minutes. This step ensures a light texture in your cupcakes.
