Instructions

  1. Preheat and prepare dish: Preheat the oven to 350°F (175°C). Line an 8×8-inch square baking dish with parchment paper to ensure easy removal of the baked yogurt.
  2. Mix main ingredients: In a large bowl, whisk together the Greek yogurt, eggs, maple syrup, and vanilla extract until the mixture is smooth and homogenous. Add the cornstarch and whisk again thoroughly to combine, which helps the mixture set properly during baking.
  3. Add berries and pour: Fold in 1 cup of the berries gently into the yogurt mixture. Pour the combined mixture into the prepared baking dish, then evenly sprinkle the remaining 1/2 cup of berries on top for garnish and added texture.
