Ingredients

Chicken

Instructions

  1. Preheat and Season Chicken: Preheat your oven to 350°F (175°C). Season the chicken thighs evenly with 1 tablespoon kosher salt and 1 tablespoon black pepper. Place the seasoned chicken in a plastic ziplock bag and refrigerate while preparing the other ingredients.
  2. Prepare Apples and Onions: In a medium mixing bowl, combine the sliced Honeycrisp apples and sliced white onion. Toss them with 1½ tablespoons extra virgin olive oil, 2 tablespoons apple cider vinegar, ½ teaspoon kosher salt, ½ teaspoon black pepper, and 2 tablespoons chopped fresh rosemary until well combined.
  3. Assemble in Skillet: Transfer the apple and onion mixture to a large cast-iron skillet, spreading evenly. Arrange the refrigerated, seasoned chicken thighs on top of the apples and onions. Place slices of the unsalted butter evenly over the chicken. Add 1-2 whole sprigs of fresh rosemary on top, gently pressing them halfway into the fruit and vegetables to infuse flavor during baking.
  4. Bake: Place the skillet in the preheated oven and bake for 40 minutes, or until the chicken is cooked through and juices run clear. The apples and onions will become tender and aromatic.
