Cheesecake Batter

Brownie Batter
- 5 tablespoons unsalted butter
- 4 ounces bittersweet or semisweet chocolate, finely chopped
- 2 large eggs
- ½ cup granulated sugar
- ½ cup packed light brown sugar
- 1 teaspoon vanilla extract
- ¼ cup Baileys Irish Cream
- ¼ teaspoon salt
- ¾ cup all-purpose flour, spooned and leveled
- 2 tablespoons natural unsweetened cocoa powder
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8-inch (20-cm) baking pan thoroughly with butter or nonstick cooking spray to ensure easy removal of the brownies.
- Make Cheesecake Batter: Microwave cream cheese in a small bowl for 20 to 30 seconds until softened. In an electric mixer bowl, beat the softened cream cheese with sugar, egg yolk, vanilla extract, Baileys Irish Cream, and flour until the mixture is smooth and creamy. Set aside this cheesecake batter.
- Make Brownie Batter: In a medium bowl, melt the butter in the microwave for about 1 minute. Immediately add the chopped chocolate, stirring until melted and smooth, reheating briefly if needed. In the electric mixer bowl, beat eggs, granulated sugar, brown sugar, vanilla extract, Baileys Irish Cream, and salt on medium speed until smooth. Add the chocolate-butter mixture and beat to combine fully. Gently fold in the flour and cocoa powder on low speed just until combined without overmixing.
- Assemble Batter Layers: Reserve ½ cup (120 ml) of brownie batter in a small microwave-safe bowl. Spread the remaining brownie batter evenly in the prepared pan. Next, spread the cheesecake batter evenly over the brownie layer. Warm the reserved brownie batter in the microwave for 15 to 20 seconds until pourable. Using a spoon, dollop about 8 spoonfuls of warm brownie batter spaced over the cheesecake layer. Swirl gently with a knife to create a marbled effect without overmixing.
- Bake and Cool: Bake in the preheated oven for 40 to 45 minutes or until the brownies are puffed, set in the center, and starting to brown on the edges. Avoid undercooking to prevent wet centers. Allow to cool completely in the pan on a wire rack before cutting. Cut into 12 or 16 squares, cleaning the knife between cuts. The brownies will initially be moist and fudgy but will firm up upon resting. Serve warm with vanilla ice cream if desired, letting the brownies cool for at least 30 minutes after baking before serving.
