Instructions
- Blanch the Bok Choy: Bring a large pot of salted water to a rolling boil. Prepare a bowl filled with ice water. Add the baby bok choy to the boiling water and cook for 1 minute to slightly soften. Immediately drain the bok choy and transfer it to the ice water bath to halt the cooking process, preserving the bright green color and crispness. Once cooled, drain again and gently pat dry with a clean towel or paper towels.
- Sauté Garlic: Heat the oil in a skillet over high heat until shimmering. Add the minced garlic and stir-fry for about 30 seconds until fragrant but not browned, releasing its aromatic flavor into the oil.
- Cook Bok Choy: Add the drained bok choy to the skillet and toss well to coat it evenly with the garlic oil. Continue cooking and stirring for 2 to 3 minutes until the bok choy just begins to brown and soften.
- Add Sauces and Finish Cooking: Pour in the soy sauce and Chinese mushroom sauce, stirring constantly to coat the bok choy evenly. Cook for an additional 1 minute to allow the flavors to meld and the sauces to slightly reduce.
- Season and Garnish: Transfer the cooked bok choy to a serving dish, season with salt and pepper to taste, and sprinkle generously with sesame seeds. Optionally, add crushed red pepper flakes for some heat. Serve immediately.
