Ingredients
Vegetables & Herbs
- 6 medium (20 oz) roma tomatoes, seeded and diced
- 1 cup chopped red onion, diced
- 1 large or 2 small jalapeños, seeded and diced (1/4 cup; leave ribs and seeds if you prefer heat)
- 3 medium avocados, semi-firm but ripe, peeled, cored, and diced
- 1/2 cup loosely packed cilantro leaves, minced
Other Ingredients
- 3 Tbsp olive oil
- 3 Tbsp fresh lime juice
- 1 clove garlic, finely minced
- 1/2 tsp salt (more or less to taste)
- 1/4 tsp freshly ground black pepper
Instructions
- Prepare the onion: Place the chopped red onion in a strainer or sieve and rinse under cool water to remove its harsh bite. Drain thoroughly to avoid excess water in the salsa.
- Combine main ingredients: Transfer the drained onion to a mixing bowl and add the diced roma tomatoes, jalapeños, and diced avocados. Gently mix to combine without mashing the avocados.
- Make the dressing: In a separate small bowl, whisk together the olive oil, fresh lime juice, finely minced garlic, salt, and freshly ground black pepper until well blended.
- Dress the salsa: Pour the dressing over the avocado and tomato mixture. Add the minced cilantro, then gently toss everything together to evenly coat all ingredients without breaking down the avocados.
- Serve: Serve immediately with tortilla chips or as a fresh topping over Mexican entrees for a burst of flavor.
Notes
- For spicier salsa, leave the seeds and ribs in the jalapeños.
- Use ripe but firm avocados to maintain texture and prevent mushiness.
- Rinsing the red onion reduces bitterness and sharpness.
- For best flavor, serve the salsa fresh; it can brown if stored for too long due to avocado oxidation.
- Adjust salt and lime juice to taste for personal preference.
