Ingredients

Bread

  • 6 small-medium slices of sesame white bloomer bread

Eggs

  • 3 – 6 eggs (1-2 per sandwich)
  • 1 tbsp butter (for frying and toasting)
  • Salt and pepper, to taste

Avocado Mixture

  • 2 medium avocados, peeled, pitted & roughly diced (ripe but not bruised)
  • 1 tbsp finely diced fresh chives
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tbsp lemon juice
  • Salt and pepper, to taste

To Serve

  • Hot sauce, as desired


Instructions

  1. Prepare the avocado mixture: In a medium-sized bowl, combine the diced avocados, finely diced fresh chives, extra virgin olive oil, lemon juice, and salt and pepper to taste. Use a fork to smash the ingredients together until mostly smooth but still with some chunks for texture. Set aside.
  2. Cook the eggs: Heat 1 tablespoon of butter in a large pan over medium heat. Crack in three eggs gently close to the pan surface and begin basting the egg whites with the melted butter by spooning it over them. This cooks the whites evenly and coats them in buttery flavor, while keeping the yolks runny. Season the eggs with salt and pepper toward the end of cooking. When the egg whites are fully opaque and cooked through, remove the eggs from the pan.
  3. Cook additional eggs if desired: If making two eggs per sandwich, crack in three more eggs now and add a dash more butter if needed for basting. Cook these eggs the same way.
  4. Toast the bread: Using the leftover butter in the pan, lay the bread slices flat and toast both sides until golden brown, about a couple of minutes per side. This adds flavor and crunch to your sandwich.
  5. Assemble the sandwich: Place the toasted bread on a plate, spread a generous layer of the smashed avocado mixture on top, then add the fried eggs. Drizzle your preferred amount of hot sauce over the eggs to add tang and spice. Finish by topping with the second slice of toast. Serve immediately and enjoy your delicious avocado egg sandwich!

  • Over easy, medium, or hard eggs: You can cook the eggs to your preferred level. For over easy, cook the whites until nearly set, then flip and cook for 30 seconds more. For over medium or hard, flip earlier and cook longer to your liking.
