Ingredients
Salad
- 1 to 2 cups torn butter lettuce
- 1 avocado, sliced
- 1 grapefruit, segmented
- 1 naval orange, segmented
- 1/4 red onion, thinly sliced
Oat Croutons
- 1/2 cup rolled oats
- 1 1/2 tablespoons sunflower seeds
- 1 1/2 tablespoons sliced almonds
- 3 garlic cloves, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons maple syrup
- 1 1/2 tablespoons olive oil
Buttermilk Drizzle
- 1/3 cup low-fat buttermilk
- 1/2 lemon, juiced
- 1 tablespoon plain Greek yogurt
- 1/2 tablespoon finely grated Parmesan cheese
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
Instructions
- Assemble the Salad: Arrange the torn butter lettuce, sliced avocado, grapefruit segments, orange segments, and thinly sliced red onion evenly onto two plates. Season lightly with salt and pepper to taste.
- Preheat for Oat Croutons: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the oat croutons.
- Prepare Oat Crouton Mixture: In a mixing bowl, combine the rolled oats, sunflower seeds, sliced almonds, thinly sliced garlic cloves, salt, and pepper. Mix thoroughly to distribute the seasonings evenly throughout the dry ingredients.
- Coat Oats for Baking: Add the maple syrup and olive oil to the oat and seed mixture. Toss well until every bit is moistened and the mixture is evenly coated with the syrup and oil.
- Bake the Oat Croutons: Spread the oat mixture out in a single layer on a nonstick baking sheet. Bake in the preheated oven for 15 to 20 minutes, tossing the mixture occasionally to ensure even browning. Remove from the oven when golden and crisp. Allow to cool completely on the baking sheet, then break into chunks for topping.
- Make the Buttermilk Drizzle: In a large bowl, whisk together the low-fat buttermilk, fresh lemon juice, plain Greek yogurt, grated Parmesan cheese, black pepper, and salt until smooth and well combined.
- Dress the Salad: Drizzle the prepared buttermilk dressing evenly over the plated salad. Sprinkle the oat croutons on top to add crunch and nutty flavor.
Notes
- Use low-fat buttermilk for a lighter dressing or substitute with regular buttermilk for creamier texture.
- For a nut-free version, omit the almonds and sunflower seeds and add extra rolled oats or pumpkin seeds instead.
- Make sure the oat croutons are completely cooled before breaking into chunks to maintain their crunch.
- Segment the citrus properly to avoid any bitter pith, ensuring a sweeter fresh burst in the salad.
- This salad is best served immediately to keep the lettuce crisp and the croutons crunchy.
