Description

This Authentic Chili Con Carne recipe is thick, hearty, and packed with robust flavors. Made with ground beef, a blend of spices, beans, and tomatoes, this chili is simmered to perfection for a comforting and satisfying meal perfect for family dinners or gatherings.

Ingredients

Meat and Aromatics

  • 2 tbsp olive oil
  • 3 cups chopped onion
  • 6 cloves garlic, minced
  • 1 jalapeño, finely chopped
  • 2 lbs ground beef

Seasonings

  • 2-3 tsp kosher salt, divided use
  • 1/2 tsp black pepper
  • 3/4 cup chili powder (blend of spices, not ground red chile)

Other Ingredients

  • 156 mL tomato paste
  • 2 cans (19 oz each) black beans
  • 2 cans (19 oz each) kidney beans
  • 4 cups diced tomato
  • 3 cups water

Instructions

  1. Cook Onion: Heat olive oil in a large pot over medium heat. Add the chopped onions and cook for about 20 minutes until they turn golden, stirring occasionally to prevent burning.
  2. Add Garlic and Jalapeño: Stir in the minced garlic and finely chopped jalapeño. Cook for an additional 1 minute until fragrant, being careful not to burn the garlic.
  3. Add Ground Beef and Season: Add the ground beef to the pot. Season with 1 teaspoon of kosher salt, black pepper, and chili powder. Cook the beef, breaking it up with a spoon, until it is no longer pink inside.
  4. Incorporate Tomato Paste: Stir in the tomato paste and cook for 2 minutes, stirring constantly until the paste darkens in color, enhancing its flavor.
  5. Add Remaining Ingredients and Simmer: Add the drained and rinsed black beans, kidney beans, diced tomatoes, water, and the remaining salt. Stir well, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes or longer for deeper flavor.

Notes

  • For a spicier chili, add more jalapeño or a pinch of cayenne pepper.
  • Use either canned beans drained and rinsed or cook dried beans beforehand.
  • If too thick, add a bit more water or broth to reach desired consistency.
  • This chili tastes even better the next day when flavors have melded.
  • Serve with toppings such as shredded cheese, sour cream, or chopped green onions.
