Ingredients

Roux

Vegetables

  • 1 bell pepper, finely diced (any color)
  • 1 large yellow onion, finely diced (approx 1 cup)
  • 5 stalks celery, finely diced
  • 5 cloves garlic, minced
  • 8 ounces frozen okra

Liquids and Seasonings

  • 28 ounces diced tomatoes
  • 64 ounces chicken stock
  • 3 bay leaves
  • 1/2 tablespoon Cajun seasoning
  • 1 teaspoon cayenne pepper
  • 1 teaspoon hot sauce
  • 1 tablespoon gumbo file powder


Instructions

  1. Make Roux: In a small saucepan over medium heat, combine 1 cup all-purpose flour with 1 cup vegetable oil. Stir occasionally for about 30 minutes until the mixture reaches a dark chocolate brown color, being careful not to burn it. Remove from heat and transfer to a bowl to stop the cooking process.
  2. Sear Chicken: Heat 2 tablespoons of vegetable or olive oil in a large pot over medium heat. Season the chicken breasts with salt and pepper on both sides. Brown the chicken in the oil for 5-7 minutes on each side until nicely seared. Remove chicken and set aside.
  3. Cook Vegetables: In the same pot, add diced bell pepper, onion, and celery. Cook for 5 minutes until they soften. Add minced garlic and cook for an additional 2 minutes until fragrant.
  4. Add Stock and Chicken: Return the whole chicken breasts to the pot. Pour in the chicken stock and increase heat to medium-high. Simmer until the chicken is fully cooked through.
  5. Add Tomatoes and Roux: Remove the chicken from the pot. Stir in the prepared roux, bay leaves, diced tomatoes, Cajun seasoning, cayenne pepper, hot sauce, and gumbo file powder. Be cautious as the roux may bubble or splatter.
  6. Shred Chicken: Once cool enough to handle, remove the chicken meat from the bones and shred it. Discard the bones and return the shredded chicken to the pot.
  7. Add Sausage and Simmer: Slice the smoked sausage into coins and add to the pot. Reduce heat to low and let the gumbo simmer gently for 1.5 to 2 hours to develop deep flavor.
  8. Add Okra: About 30 minutes before the gumbo is finished cooking, add the frozen okra to the pot and stir well.
  9. Final Seasoning and Serve: Taste and adjust seasoning with salt, pepper, and additional hot sauce as desired. Serve hot over cooked rice or with French bread.
