Ingredients

Beef and Marinade

  • 3 lbs beef chuck roast, cut into large chunks
  • 4 dried guajillo chilies
  • 2 dried ancho chilies

  • 6 garlic cloves
  • 1 tbsp whole cumin seeds
  • 1 tsp dried oregano
  • 1/2 tsp ground cloves
  • 2 bay leaves
  • 1 cinnamon stick
  • 1/4 cup apple cider vinegar
  • 4 cups beef broth, divided
  • 2 tbsp vegetable oil

Instructions

  1. Toast Chilies: Heat a dry skillet over medium heat and toast the dried guajillo, ancho, and pasilla chilies for 1-2 minutes per side until aromatic. Remove from heat, discard seeds and stems, then soak the chilies in hot water for 15 minutes to soften.
  2. Toast Cumin Seeds: In the same skillet, toast the cumin seeds over medium heat for about 1 minute until fragrant, then set aside.
  3. Make Chili Paste: Drain the soaked chilies and combine them in a blender with the toasted cumin seeds, half of the white onion, all garlic cloves, oregano, ground cloves, 1 cup of beef broth, and apple cider vinegar. Blend until smooth to create a rich chili paste.
  4. Marinate Beef: In a large bowl, thoroughly coat the beef chuck roast chunks with the prepared chili paste. Cover and refrigerate to marinate for at least 2 hours, preferably overnight for deeper flavor infusion.
  5. Brown Beef: Heat vegetable oil in a large pot over medium-high heat. Add the marinated beef and brown on all sides for about 5 minutes to develop a flavorful crust.
