Ingredients
Stewed Apples
- 1 tbsp coconut oil or butter (vegan option recommended)
- 2 apples, peeled or unpeeled, diced
- 1-2 tsp maple syrup
- 1/2 tsp cinnamon
- 1 pinch salt
Overnight Oats
- 1 cup rolled oats
- 1 tbsp chia seeds or ground flaxseed
- 1/2 cup Greek yoghurt (vegan Greek yogurt preferred)
- 1.5 cups soya milk or milk of choice
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2-1 tbsp maple syrup (optional)
- 1 pinch salt
Toppings (Optional)
- Almond butter
- Cashew butter
- Syrup
- Cinnamon
Instructions
- Prepare the Apples: Heat a saucepan over low heat and add the coconut oil or butter. Add the diced apples along with cinnamon, a pinch of salt, and maple syrup. Cover with a lid and cook for 10 minutes, stirring occasionally to soften the apples and let flavors meld. Remove the lid and cook for another minute while stirring to slightly reduce the liquid.
- Mix Overnight Oat Ingredients: In a large bowl, combine rolled oats, chia seeds or ground flaxseed, Greek yoghurt, soya milk, cinnamon, vanilla extract, maple syrup (optional), and a pinch of salt. Mix well to combine all ingredients uniformly.
- Soak the Oats: Cover the bowl and refrigerate overnight or for at least 2-3 hours until the oats have absorbed the liquid and formed a creamy, porridge-like consistency.
- Serve: Spoon the soaked oats into bowls or jars. Top with the warm stewed apples and your choice of optional toppings such as almond butter, cashew butter, syrup, and a sprinkle of cinnamon. Enjoy immediately or store jars for grab-and-go breakfasts.
