Ingredients

Apple Pie Filling

  • 3 Fuji apples, peeled and diced (Granny Smith apples can also be used)
  • 1 Tbsp fresh lemon juice
  • ¼ cup white sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (adjust to taste)
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ¼ cup walnuts, chopped
  • 1 Tbsp cornstarch (or arrowroot)
  • ⅓ cup water (for cornstarch slurry)

Egg Rolls

  • 8-10 egg roll wrappers
  • Oil or water for sealing the egg rolls
  • Cooking spray (if air frying)

Icing (Optional)

  • ⅓ cup powdered sugar
  • 1 tsp milk or water (to whisk with powdered sugar)


Instructions

  1. Prepare the apple filling: Add the diced apples to a skillet over low to medium heat. Squeeze in the lemon juice and add white sugar, cinnamon, salt, nutmeg, vanilla extract, chopped walnuts, and the cornstarch slurry (cornstarch mixed with water). Stir the mixture well and let it simmer for about 2 minutes, or until the filling thickens and becomes slightly glossy.
  2. Cool the filling: Remove the skillet from heat and allow the apple mixture to cool completely. For faster cooling, place the skillet in the refrigerator for about 15 minutes.
  3. Preheat the oven (if baking): Set your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Assemble the egg rolls: Place about 4 tablespoons of the cooled apple filling in the center of each egg roll wrapper. Fold and roll the wrapper into a classic egg roll shape, sealing the edges with a brush of oil or water to ensure they hold together well during cooking.
  5. Cook the egg rolls:
    • Oven method: Place the assembled egg rolls on the parchment-lined baking sheet. Bake at 375°F for approximately 15-20 minutes or until the wrappers are golden brown and crispy.
    • Air fryer method: Place the egg rolls on parchment paper inside the air fryer basket. Lightly spritz them with cooking spray. Air fry at 350°F for 12-18 minutes, flipping halfway through, until they are browned and crisp with small bubbles on the surface.
  6. Cool and serve: Allow the apple pie egg rolls to cool slightly. Optionally, prepare the icing by whisking powdered sugar with milk or water until smooth, then drizzle over the egg rolls. You may also serve them with melted caramel sauce if desired.
