Ingredients
Wet Ingredients
- 1 1/2 cups unsweetened apple sauce
- 2 large eggs
- 1/4 cup brown sugar
- 1/2 tsp vanilla extract
- 1 cup milk
Dry Ingredients
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3/4 tsp baking powder
- 2 cups old-fashioned rolled oats
Fruit
- 1 cup cranberries (fresh or frozen, sliced in half)
Instructions
- Preheat and prepare wet ingredients: Preheat the oven to 375ºF. In a large bowl, combine the unsweetened apple sauce, eggs, brown sugar, vanilla extract, cinnamon, salt, and baking powder. Whisk together thoroughly until the mixture is smooth and well blended.
- Add milk and combine: Pour in the milk and whisk again until the mixture is smooth and uniform.
- Prepare cranberries and oats: Slice the cranberries in half (no need to thaw if frozen). Add them to the wet mixture along with the rolled oats. Stir gently to combine all ingredients evenly without overmixing.
- Transfer and bake: Pour the oat mixture into a 2-quart casserole dish, spreading it out evenly. Place the dish into the preheated oven and bake at 375ºF for 45 minutes, or until the top turns a light golden brown and the center is set and no longer sticky.
- Serve or store: Remove from the oven and serve hot. Alternatively, refrigerate the baked oatmeal and reheat portions as desired for a convenient breakfast option throughout the week.
Notes
- Using old-fashioned rolled oats gives the best texture; quick oats are not recommended.
- No need to thaw frozen cranberries before slicing and adding to the mixture.
- For a dairy-free version, substitute milk with almond milk or other plant-based milk.
- This baked oatmeal stores well in the refrigerator for up to 5 days.
- You can add chopped nuts or seeds for extra crunch and nutrition if desired.
