Description

A refreshing and vibrant apple coleslaw featuring shredded green cabbage, crisp apple matchsticks, tangy dried cranberries, and crunchy candied pecans, all tossed in a creamy, slightly sweet balsamic maple dressing. Perfect as a quick side dish or a light salad to complement any meal.

Ingredients

Dressing

  • ¼ cup mayonnaise
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons maple syrup
  • ½ teaspoon kosher salt (plus more if needed)
  • ¼ teaspoon black pepper (plus more if needed)

Salad

  • 4 cups shredded green cabbage (from about ½ head of cabbage)
  • 1 large apple, cut into matchsticks (any kind will work)
  • ½ cup thinly sliced red onion (from about ½ of a medium onion)
  • ½ cup dried cranberries (sweetened)
  • 2 tablespoons chopped fresh parsley
  • ½ cup candied pecans, chopped (see notes for alternatives)

Instructions

  1. Prepare the dressing: In a large bowl, whisk together the mayonnaise, balsamic vinegar, extra-virgin olive oil, maple syrup, kosher salt, and black pepper until smooth and well combined.
  2. Add salad ingredients: Add the shredded green cabbage, apple matchsticks, thinly sliced red onion, dried cranberries, chopped fresh parsley, and chopped candied pecans to the bowl with the dressing.
  3. Toss the salad: Use tongs to mix every ingredient thoroughly ensuring the dressing evenly coats the cabbage and other ingredients.
  4. Season and serve: Taste the coleslaw and adjust the seasoning with additional salt and pepper if needed. Serve immediately for a crisp texture, or cover and refrigerate for about 30 minutes to allow the flavors to meld together nicely.

Notes

  • For candied pecan alternatives, toasted pecans tossed with a drizzle of honey or maple syrup can be used.
  • This coleslaw can be prepared ahead and stored in the refrigerator for up to 1 day, but best enjoyed within a few hours for optimum crunch.
  • Use any apple variety you prefer; tart apples like Granny Smith add a nice balance to the sweetness of the dressing.
  • If you prefer, substitute mayonnaise with Greek yogurt for a lighter dressing.
