Ingredients

Phyllo Dough Base

  • 8 ounces (227g) phyllo dough, thawed (about 10 sheets, 14×18-inch each)
  • 1/2 cup (8 Tbsp; 113g) salted butter*
  • 2 teaspoons fresh thyme leaves

Filling

  • 812 ounces (227–340g) brie cheese*
  • 4 small apples (Honeycrisp recommended)
  • 2 Tablespoons light or dark brown sugar

Garnishes

  • Honey, for drizzling
  • Flaky sea salt, for sprinkling
  • Additional fresh thyme leaves (optional)


Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (177°C). Line a large baking sheet with a silicone baking mat or parchment paper to prevent sticking and set it aside.
  2. Melt Butter with Thyme: In a small skillet or saucepan, gently melt the salted butter together with the fresh thyme leaves to infuse the butter with herbaceous flavor. Pour the melted thyme butter into a heatproof bowl for easy brushing.
  3. Prepare Phyllo Dough: Lightly brush the lined baking sheet with some of the melted thyme butter. Unroll the phyllo dough sheets on a clean, dry surface. Remove the first sheet and immediately cover the remaining sheets with a damp towel or damp paper towels to prevent them from drying out as you work.
  4. Layer the Phyllo Sheets: Place one sheet of phyllo dough on the prepared baking sheet and brush it lightly with the thyme butter. Place the second sheet on top at about a 10-degree angle and brush it with butter. Continue layering and brushing each sheet, slightly rotating them to create a beautiful pattern, until all 10 sheets are used. Keep the edges covered with damp towels to avoid drying out.
  5. Add Brie Cheese: Spread the brie cheese evenly over the layered phyllo, leaving about a 4-inch border around the edges. If the brie isn’t spreadable, dot the surface with small slices or pieces of brie instead.
  6. Prepare Apple Topping: Core and thinly slice the apples. Toss the apple slices with the brown sugar in a medium bowl until well coated. Arrange the apple slices evenly on top of the brie, slightly overlapping them for an attractive presentation.
  7. Create the Galette Edge: Remove the damp towels and gently fold the edges of the phyllo dough over the apples to form a crust, overlapping the dough as needed. Brush the folded edges generously with the remaining melted thyme butter to ensure a golden crust.
  8. Bake: Place the galette in the preheated oven and bake for 40–45 minutes, or until the phyllo is golden brown and crisp, and the apples are tender.
  9. Finish and Serve: Remove from oven and immediately drizzle honey evenly over the galette. Sprinkle with flaky sea salt and additional fresh thyme leaves if desired. Slice and serve warm for the best flavor.
  10. Storage and Reheating: Store any leftovers covered in the refrigerator for up to 3 days. To reheat, warm the galette in a 325°F (163°C) oven for about 10 minutes until heated through and crisp.
