For the Bread Batter
- 2 large eggs
- ½ cup granulated sugar

- ½ teaspoon salt
- 1½ teaspoons baking powder
- 1 cup peeled, cored, and finely diced tart baking apples (preferably Granny Smith, about 1 apple)
For the Cinnamon Swirl
- ½ cup light brown sugar (packed)
- 1½ teaspoons ground cinnamon
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and position a rack in the middle of the oven. Lightly spray an 8½ x 4½-inch (22 x 11 cm) loaf pan with nonstick cooking spray. Line the long side of the pan with a parchment paper sling and spray lightly again to ensure easy removal of the bread.
- Make Cinnamon Sugar: In a small bowl, combine the brown sugar and ground cinnamon thoroughly. Set aside this mixture for layering in the bread.
- Beat Eggs and Sugar: In the bowl of an electric mixer fitted with the paddle attachment or beaters, beat the eggs and granulated sugar on medium speed until the mixture becomes pale and creamy, about 2 minutes.
- Add Wet Ingredients: With the mixer on low, gradually add the cooled melted butter, then milk, and finally the vanilla extract. Mix just until the wet ingredients are evenly incorporated.
- Combine Dry Ingredients: Add the all-purpose flour, salt, and baking powder to the batter. Mix on low speed just until the dry ingredients are fully combined without overmixing.
- Fold in Apples: Gently fold in the diced apples using a rubber spatula until they are evenly distributed throughout the batter.
- Layer Batter and Cinnamon Sugar: Spoon about two-thirds of the batter into the prepared loaf pan. Sprinkle approximately two-thirds of the cinnamon sugar mixture evenly over the batter. Carefully spoon the remaining batter on top, then sprinkle with the remaining cinnamon sugar. Using a butter knife, swirl the batter and sugar by making a zig-zag motion once in each direction, being careful not to over swirl.
- Bake the Bread: Bake in the preheated oven for about 50 minutes, or until the bread turns golden brown and a toothpick or cake tester inserted in the center comes out clean.
- Cool and Serve: Remove the bread from the oven and let it cool on a wire rack for 30 minutes. Use the parchment paper sling to lift the bread out of the pan and place it directly on the rack. Allow the bread to cool completely before slicing. Store loosely covered with aluminum foil on the countertop for up to 4 days to maintain freshness.
