Ingredients

Brown Sugar Cinnamon Mixture

  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon

Batter

  • 2 large eggs, room temperature
  • ½ cup granulated sugar
  • ½ cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (Pink Lady, Gala, Honeycrisp or any baking apple), peeled and chopped (about 2 apples)


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line it with parchment paper. Set aside.
  2. Make Cinnamon Sugar Mixture: In a small bowl, whisk together the brown sugar and ground cinnamon until combined. Set this mixture aside for layering later.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs and granulated sugar until smooth and combined. Then stir in the melted butter and vanilla extract until thoroughly incorporated.
  4. Add Dry Ingredients: To the wet ingredients, gently fold in the all-purpose flour, baking powder, baking soda, and salt just until everything is combined. The batter will be very thick.
  5. Fold in Apples: Carefully fold the chopped apples into the batter, ensuring they are evenly distributed.
  6. Layer Batter and Cinnamon Sugar: Pour half of the batter into the prepared loaf pan, spreading it evenly. Sprinkle about three-quarters of the cinnamon sugar mixture over this layer.
  7. Top with Remaining Batter and Swirl Cinnamon Sugar: Spread the remaining batter gently on top of the cinnamon sugar layer. Sprinkle the remaining cinnamon sugar mixture over the top, then use a knife or spoon to swirl it lightly into the top layer for a cinnamon swirl effect.
  8. Bake the Bread: Bake in the preheated oven for 35 to 45 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the bread starts to brown too quickly, tent it with foil during the last 10 to 15 minutes of baking.
  9. Cool and Serve: Allow the apple bread to cool completely in the pan before slicing. This will help it set and make slicing easier. Once cool, slice and enjoy your homemade apple bread.
