Sweet Potatoes

  • 4 large sweet potatoes (mostly fat and round)

Filling

  • 3 slices beef, chopped
  • 2 honey crisp apples, diced
  • 3 tablespoons freshly chopped sage
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cinnamon
  • 4 ounces goat cheese (divided; 3 ounces for mash, 1 ounce for topping)


Instructions

  1. Prepare and Bake Sweet Potatoes: Preheat your oven to 350°F (175°C). Poke holes all over each sweet potato using a fork. Wrap each sweet potato tightly in aluminum foil to lock in moisture during baking. Place them on a baking sheet and bake for 45-60 minutes until they are tender when pierced. Remove from oven, carefully unwrap, and let them cool slightly until safe to handle.
  2. Cook Beef and Apples: While the sweet potatoes bake, heat a large skillet over medium heat. Add the chopped beef and cook, stirring occasionally, until it’s crispy and the fat has rendered out. Remove the beef from the skillet using a slotted spoon and drain it on paper towels to remove excess grease. To the same skillet, add the diced apples, nutmeg, and freshly chopped sage, tossing well to coat. Cook the apples until they soften and start to caramelize, developing rich flavors. Return the beef to the skillet, stir to combine, then set aside off heat.
  3. Prepare Sweet Potato Mash: Once the sweet potatoes are cool enough to handle, cut a slit lengthwise down the center of each. Gently scoop out the flesh with a spoon, being careful to keep the skins intact. Place the sweet potato flesh in a large mixing bowl. Add 3 ounces of goat cheese, cinnamon, nutmeg, salt, and pepper to the bowl. Mash the mixture well until smooth and creamy. Adjust seasoning to taste if needed.
  4. Stuff and Reheat Potatoes: Scoop the mashed sweet potato mixture evenly back into each sweet potato skin. If the potatoes have cooled completely, place them back onto a baking dish and warm them in the oven for 10 minutes at 350°F to heat through. Remove from oven and sprinkle the remaining 1 ounce of goat cheese on top.
