Description

This Apple & Cinnamon Slice is a delightful dessert featuring a golden buttery cake base mixed with desiccated coconut, topped with apple slices, a layer of light sour cream, and a sprinkle of cinnamon sugar. Baked to perfection, it offers a perfect balance of sweet and tangy flavors with a soft and slightly crumbly texture. Ideal for afternoon tea or a comforting treat.

Ingredients

Base

  • 340g packet golden buttercake cake mix
  • 1 cup (90g) desiccated coconut
  • 125g butter, melted

Topping

  • 400g can apple slices
  • 300g light sour cream
  • 1 tsp cinnamon sugar

Instructions

  1. Preheat and prepare pan: Preheat your oven to 180°C (350°F). Grease a 20cm square cake pan, then line the base and two opposite sides with baking paper, ensuring the paper extends 5cm above the pan edges to help lift the slice out easily later.
  2. Make the base: In a medium bowl, combine the golden buttercake cake mix, desiccated coconut, and melted butter. Mix thoroughly until evenly blended. Press this mixture firmly and evenly into the base of the prepared pan to form a compact layer. Bake in the oven for 15 minutes, or until the base is lightly browned. Allow to cool slightly before adding the toppings.
  3. Add toppings and bake: Evenly spread the canned apple slices over the slightly cooled base. Then, carefully spread the light sour cream evenly on top of the apples. Sprinkle the cinnamon sugar evenly over the sour cream layer. Return the pan to the oven and bake for a further 20 minutes, or until the sour cream topping has set firmly.
  4. Cool and serve: Remove from the oven and allow the slice to cool completely in the pan. Using the edges of the baking paper, lift the slice out of the pan. Cut into finger-sized pieces and serve as a delicious snack or dessert.

Notes

  • Be sure to press the base mixture firmly for a stable crust that holds together well when serving.
  • You can substitute light sour cream with Greek yogurt for a tangier flavor.
  • For extra crunch, sprinkle some chopped nuts over the cinnamon sugar before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Ensure the slice cools completely before cutting to prevent it from crumbling.
