Ingredients

Halibut

  • 4 halibut fillets, 5 oz each (thawed if previously frozen)
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Basil Chimichurri Sauce

  • 1 cup packed basil leaves
  • ½ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 4 garlic cloves, peeled
  • ½ teaspoon sea salt
  • ½ teaspoon oregano
  • ¼ teaspoon black pepper
  • ¼ teaspoon red chili flakes


Instructions

  1. Make the Basil Chimichurri Sauce: Place all ingredients for the chimichurri sauce—basil leaves, extra virgin olive oil, red wine vinegar, garlic cloves, sea salt, oregano, black pepper, and red chili flakes—into a food processor. Process until the basil leaves are finely chopped and the mixture is well combined but still slightly textured.
  2. Prepare the Halibut: Season each halibut fillet on both sides with sea salt and black pepper. Brush some of the prepared chimichurri sauce evenly over the fillets to infuse flavor before cooking.
  3. Preheat Air Fryer: Set your air fryer to 360°F (182°C) and allow it to preheat for a few minutes to ensure even cooking.
  4. Cook the Halibut: Place the seasoned and sauced halibut fillets in the air fryer basket in a single layer. Air fry for 8-10 minutes, or until the fish reaches an internal temperature of 135-140°F (57-60°C), indicating it is perfectly cooked and flaky.
  5. Serve: Carefully remove the halibut from the air fryer. Serve immediately topped with additional chimichurri sauce for extra flavor and freshness.
