Ingredients
Artichokes
- 1 can whole artichoke hearts in water
- 1 tbsp extra virgin olive oil
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
- ½ tsp dried oregano
- 2 tbsp arrowroot powder
- 2 tbsp finely grated parmesan
Aioli Sauce
- ½ cup mayonnaise
- 2 cloves garlic, minced
- 1 tbsp finely chopped basil
- 2 tsp lemon zest
- 1 tsp lemon juice
- ¼ tsp salt
Instructions
- Preheat air fryer: Preheat your air fryer to 400º Fahrenheit for 5 minutes to ensure it’s hot and ready for cooking the artichokes evenly.
- Prepare artichokes: Remove the artichoke hearts from the can and carefully cut each in half, being gentle to keep the halves intact since they are delicate.
- Dry artichokes: Place two pieces of paper towel on the counter and set the artichoke halves face down on them to absorb any excess moisture, helping them crisp better when cooked.
- Season artichokes: Transfer the artichoke halves to a bowl, drizzle with olive oil, then add garlic powder, salt, pepper, and dried oregano. Gently stir to coat evenly.
- Coat with arrowroot and parmesan: Add the arrowroot powder and stir again for even coverage. Then mix in the finely grated parmesan cheese thoroughly.
- Prepare air fryer basket: Spray the preheated air fryer basket generously with cooking spray to prevent sticking.
- Arrange artichokes in basket: Place the artichoke halves evenly spaced in the basket. Sprinkle any leftover parmesan from the bowl over the top for extra crispness.
- Cook artichokes: Cook for 5 minutes, then flip each artichoke half over carefully and cook for an additional 5 minutes until golden and crispy.
- Make aioli: While the artichokes are cooking, combine mayonnaise, minced garlic, chopped basil, lemon zest, lemon juice, and salt in a small bowl. Stir thoroughly to blend the flavors.
- Serve: Plate the crispy artichokes and serve with the garlic basil aioli on the side for dipping, enhancing the flavor with a creamy, zesty kick.
Notes
- Be gentle when halving the artichokes as they are delicate and can break apart.
- Arrowroot powder helps achieve a crispy coating without gluten, making this recipe gluten-free.
- If your air fryer basket is small, cook the artichokes in batches to ensure even air flow and crispiness.
- You can substitute mayonnaise in the aioli with a vegan alternative for a vegan version.
- Adjust seasoning to taste, especially the salt and garlic powder, based on your preference.
