Ingredients

Truffle Filling

  • 2 and 2/3 cups (454g/16 ounces) semi-sweet chocolate, finely chopped
  • 1 cup (227g/8 ounces) heavy cream
  • 2 teaspoons espresso powder
  • 6 Tablespoons unsalted butter, cut into small cubes and at room temperature

Chocolate Coating and Garnish

  • 2 and 2/3 cups (454g/16 ounces) semi-sweet chocolate, finely chopped
  • 72 espresso beans or coffee beans


Instructions

  1. Prepare the chocolate: Place the finely chopped semi-sweet chocolate for the filling in a medium-sized heatproof bowl and set aside.
  2. Heat the cream: In a small saucepan over medium heat, bring the heavy cream to a boil. Once boiling, remove from heat and whisk in the espresso powder until dissolved.
  3. Combine cream and chocolate: Pour the hot cream mixture over the chopped chocolate. Let it sit untouched for two minutes to soften the chocolate, then whisk gently until smooth and glossy.
  4. Add butter: Stir in the room temperature unsalted butter cubes and whisk vigorously until the mixture is smooth and shiny.
  5. Chill the filling: Allow the mixture to cool to room temperature, then cover tightly with plastic wrap and refrigerate for 2 hours or until firm enough to scoop.
  6. Prepare for rolling: Line two large baking sheets with parchment paper and make sure there is space in your refrigerator to chill the truffles later.

  11. Reheat tempered chocolate: Place the bowl back over simmering water and gently reheat the chocolate to between 88°F and 91°F for a smooth, glossy finish. Remove from heat.
  12. Dip the truffles: Using a fork or candy dipper, dip each chilled truffle into the tempered chocolate, letting excess drip off. Return to the parchment-lined baking sheet.
  13. Garnish: Top each dipped truffle with two espresso beans.
  14. Set the coating: Allow the chocolate shell to set at room temperature for about 1 hour before serving.
  15. Storage: Store truffles in an airtight container at room temperature for up to 1 week.
