Description

These 30-Minute Black Bean Burgers are a quick, flavorful, and healthy vegetarian alternative to traditional beef burgers. Made without oats and using pantry staples like black beans, bell pepper, and spices, these patties come together easily with a handful of ingredients. They can be cooked on the stove, grill, or baked in the oven, offering versatility and a satisfying texture with a slightly crispy exterior and tender interior. Perfect for a weeknight meal or casual cookouts.

Ingredients

Base Ingredients

  • 2 15-oz cans black beans (drained and rinsed, 425 g cans)
  • 1 green bell pepper (seeds and stem removed)
  • ½ medium white onion (cut into chunks)
  • 2 cloves garlic

Seasoning

  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • ¼ tsp salt
  • ¼ tsp black pepper

Binder and Coating

  • 1 cup panko breadcrumbs (60 g)
  • 1 large egg

Instructions

  1. Dry Beans: Drain and rinse the black beans well, then spread them onto several layers of paper towels to let them dry thoroughly. Removing excess moisture helps the patties hold together better.
  2. Prepare Flavor Base: Add the green bell pepper, white onion, and garlic cloves to a food processor. Pulse until finely chopped. Transfer this mixture to a mesh sieve and press out as much moisture as possible using a spatula or spoon to avoid soggy patties.
  3. Make Burger Dough: Add the dried beans back into the food processor along with the pepper mixture, smoked paprika, cumin, chili powder, salt, and black pepper. Pulse just until combined, leaving some larger pieces of beans for texture.
  4. Mix and Bind: Transfer the bean mixture to a large bowl. Stir in the panko breadcrumbs and the egg until everything is thoroughly incorporated. For best shaping results, refrigerate the dough for at least 30 minutes or up to 24 hours.
  5. Shape Patties: Scoop out ½ cup portions of the mixture and form them into burger patties using your hands, shaping them evenly.
  6. Cook Patties: Choose your cooking method:
    • Stovetop: Heat a greased sauté pan over medium-high heat and cook patties for 5 to 7 minutes on each side until golden brown and firm.
    • Grill: Place the patties on a greased piece of aluminum foil over medium-high heat and grill for about 7 minutes per side until golden and cooked through.
    • Oven: Arrange patties on a greased baking sheet and bake at 400°F (204°C) for 15 to 20 minutes, flipping once halfway through cooking.
  7. Serve: Serve your black bean burgers on buns with your favorite toppings such as cheese, lettuce, tomato, and red onion for a delicious, wholesome meal.

Notes

  • Drying the beans and the pepper mixture thoroughly is crucial to ensure the patties hold together and have a good texture.
  • Refrigerating the burger dough before shaping makes it easier to form and helps patties keep their shape during cooking.
  • Panko breadcrumbs provide a lighter crunch; regular breadcrumbs can be substituted but may result in a denser patty.
  • Cooking times may vary slightly depending on your equipment, so watch for a golden brown crust and firm texture to ensure doneness.
  • These burgers can be frozen after shaping. Freeze on a baking sheet then transfer to a bag; cook from frozen, adding a few extra minutes to cooking time.
