Description

A quick and flavorful 15-minute meal prep recipe for Sesame Noodle Bowls featuring a creamy sesame sauce, fresh vegetables, and optional chicken, perfect for make-ahead lunches or easy dinners.

Ingredients

Sesame Sauce

  • 1/4 cup sesame paste (or tahini)
  • 1/4 cup warm water
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, grated
  • Sriracha and sugar to taste

Noodles and Toppings

  • 6-8 ounces stir fry noodles, Chinese egg noodles, or linguine
  • 2 cups edamame, cooked
  • 2 cucumbers, diced
  • 1 lb. chicken breast, cooked and diced (optional)
  • Sesame seeds for garnish

Instructions

  1. Prepare the Sauce: Whisk together sesame paste, warm water, soy sauce, sesame oil, rice vinegar, grated garlic, Sriracha, and sugar until smooth. Alternatively, blend in a food processor or shake vigorously in a jar for quick mixing.
  2. Cook the Noodles: Boil noodles for a few minutes less than package instructions to retain firmness. If noodles are sticky, rinse with cold water to separate strands.
  3. Mix Noodles with Sauce: Toss the drained noodles with about half of the prepared sesame sauce to coat evenly.
  4. Assemble the Bowls: Divide the sauced noodles among four containers or bowls. Add cooked edamame, diced cucumbers, and optional cooked chicken breast evenly on top.
  5. Finish and Store: Drizzle remaining sesame sauce over the assembled bowls and sprinkle with sesame seeds. Store in the refrigerator for 3-4 days. Serve hot or cold as preferred.
  6. Optional: Take a photo to share on social media – these bowls are as photogenic as they are delicious!

Notes

  • For a vegetarian or vegan option, omit chicken or substitute with tofu or tempeh.
  • Adjust Sriracha and sugar levels to balance heat and sweetness according to taste.
  • If using chicken, ensure it is cooked thoroughly before dicing and adding to the bowls.
  • Storing the sauce separately can keep noodles from getting soggy if preferred.
