Description

This quick and delicious 15 Minute Black Bean and Spinach Burritos recipe is a perfect easy meal packed with protein-rich black beans, fresh spinach, and melty cheese wrapped in warm flour tortillas. A healthy vegetarian option full of flavor with spices like paprika and cumin, these burritos are simple to prepare using stovetop sautéing and microwaving for soft tortillas. Ideal for a satisfying lunch or dinner, they come together in just 15 minutes and serve two people.

Ingredients

For the Filling

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup onion, diced
  • 1 1/2 cups black beans, cooked or 1 can drained
  • 1 1/2 cups corn, cooked or 1 can drained
  • 1 1/2 cups spinach (packed, about 2-3 oz), chopped
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1 1/4 to 1 1/2 cups finely shredded cheese (cheddar, pepper jack, monterey jack, or a blend)

For Assembly

  • 2 large flour tortillas

Instructions

  1. Sauté Aromatics: Heat the olive oil in a sauté pan over medium heat. Add the minced garlic and diced onion, sautéing for 1 to 2 minutes until fragrant and translucent.
  2. Add Spinach: Quickly chop the spinach if not already done and add it to the pan. Sauté together for another 1 to 2 minutes until the spinach wilts down.
  3. Combine Beans and Corn: Stir in the black beans and corn, cooking for an additional 5 to 6 minutes to heat through and blend flavors.
  4. Season and Melt Cheese: Lower the heat to medium-low and add the paprika, cumin, kosher salt, and black pepper. Stir well to combine. Then sprinkle the shredded cheese over the mixture and stir gently until the cheese melts evenly throughout the filling.
  5. Warm Tortillas: While filling is finishing, place the flour tortillas on a plate, cover each with a damp paper towel, and microwave for about 20 seconds. This steams and softens the tortillas, making them pliable for wrapping.
  6. Fill Tortillas: Place one tortilla on a clean plate or cutting board and add two to three large scoops of the warm filling into the center of the tortilla.
  7. Wrap Burritos: Fold in the sides of the tortilla over the filling toward the center. Then fold the bottom edge up over the filling, tucking it under securely. Keeping the sides folded in, roll the burrito tightly to enclose all the filling.
  8. Serve: Serve immediately with your choice of condiments such as hot sauce, fresh lime juice, salsa verde, or other favorite toppings.

Notes

  • Use canned black beans and corn to save prep time; rinse and drain well to reduce sodium and excess liquid.
  • Feel free to experiment with different cheeses or use a dairy-free alternative for a vegan version.
  • Adding a squeeze of lime juice inside the burrito before wrapping adds a bright, fresh flavor.
  • Leftover filling can be stored in an airtight container in the refrigerator for up to 3 days.
  • For added protein, consider adding cooked quinoa or brown rice to the filling mixture.
  • To make the burritos gluten-free, substitute the flour tortillas with gluten-free tortillas or large lettuce leaves for wraps.
